Yesterday I found some good-looking apples, so I made apple compote for the first time in ages. It could not be simpler — water, wine and sugar, then about twenty minutes bubbling away over low heat. With inflation pushing fruit prices higher I hesitate even over apples, but fruit is good for you, so I eat it when I can. Kept in the fridge, the compote goes into yogurt, sits on ice cream, or gives me a sweet bite when my throat feels dry.
