My favorite thing lately is pumpkin soup. Japan's humid summer makes the body hold on to water, which is said to cause chills and other complaints, and kabocha is supposed to be very good for that summer swelling. I do not want to cook anything elaborate, but this soup is easy. Simmer steamed kabocha gently with onion fried in butter, cool it, blend it smooth, then return it to the pan with milk and season with consomme, salt and pepper. Good hot, good chilled, and it keeps well.
