The other day I went for dinner at a sushi restaurant in Tsukiji, Tokyo. Of everything we ate, the best was the oyster. Oysters suggest winter, yet what I had was iwagaki, whose season is summer. It was large, wonderfully sweet and mellow. Sure that oysters belonged to winter, I had never eaten one in summer, and learned for the first time how good they can be. Just remembering brings the taste back. Tsukiji is a morning market: shops close by noon and by night it is empty. Still, the sushi there is wonderful, and I want that iwagaki again.
